Camargue Bull Terrine AOP
In 2007, when Solange Telme took over the family business, her first creation was this bull terrine, which quickly found its audience.
Gardiane AOP meat, please, Nyons AOP olives, a red wine marinade, a dash of Espelette AOP pepper. And of course, a free-range pork base for the stuffing, otherwise it would be too dry or too "wild"!
For centuries, the Camargue Bull has provided tasty, tender, and lean meat. Living in total freedom in the Camargue's natural environments, it is the emblematic guarantor of their survival and contributes to the richness of their biodiversity. Of course, this bull is bred; we are often asked if it is the bull used for bullfighting, but no :-)
