Terrine with Banon AOC goat cheese
Banon AOC goat's cheese is one of the few goat's cheeses to be made using the soft, ladle-moulded curd technique , imposed by the hot, dry climate of the Alpes-de-Haute-Provence.
First matured naked, the small cheese is then folded in chestnut leaves held together by strands of natural raffia, a folding carried out by expert hands.
